Pineapple Stuffing

Ingredients:

1/2 cup melted butter

1 cup sugar

1 (20 oz.) can crushed pineapple (not drained)

4 eggs

10 slices bread (cubed)

1/2 cup milk

Directions:

Mix butter, sugar, eggs & milk. Add pineapple and bread and place in baking dish. 

Bake at 350 for 40 minutes.

This dish compliments any meal and is especially delicious with turkey or ham.

Quick & Easy Blender Lemon Pie

Ingredients:

1 large lemon (including skin - preferably thin skin)

4 eggs

1 stick butter, softened

1-1/2 cups sugar

1 (9") deep dish frozen pie shell (unbaked)

Directions:

Thinly slice ends from whole lemon. Cut in quarters and remove seeds. Place lemon quarters in blender and add eggs. Blend until smooth. Add butter, 1/4 at a time, blending well between additions.

While blender continues to mix, slowly pour sugar into mixture. Blend until smooth. Pour into unbaked pie shell and bake at 350 for 40 minutes (or until lightly browned).

Cool completely before serving or place in refrigerator until cool and firm.


*Tip: If you have a garbage disposal, throw your sliced lemon ends in for a lemony fresh scent

Peach Melba Trifle

Ingredients:

14 oz. can sweetened condensed milk

1-1/2 cups water

3-3/4 oz. instant vanilla pudding

8 oz. container cool whip

10-12 oz. angel food or pound cake cut into pieces

29 oz. can sliced peaches (drained)

1 qt. fresh sliced strawberries

Directions:

Mix condensed milk, water & pudding and blend well ... chill in freezer for 5 minutes.

Add cool whip.

Put 1/3 cake cubes in bottom of clear glass trifle bowl.

Top with 1/3 peaches, 1/3 strawberries & 1/3 pudding mix.

Repeat layering with remaining fruit, cake & pudding mix & chill.

Garnish with remaining fruit slices.

Golden Crumb Broccoli

Ingredients:

2 bunches fresh broccoli

1 (10 oz.) can condensed cream of mushroom soup

1/4 cup mayonnaise

1/4 cup shredded sharp American cheese (1 ounce)

1-1/2 teaspoons lemon juice

1/3 cup crushed round cheese crackers (8 crackers)

Directions:

Cut up broccoli and steam in microwave or on stove top. Place steamed broccoli in 1 1/2 quart casserole dish. Mix soup, mayo, cheese and lemon juice. Pour over broccoli and top with crushed crackers. 

Bake (uncovered) at 350 for 35 minutes.

                 Lemony Blueberry Layered Pie

  • Prep Time: 20 minutes
  • Chilling Time: 1 hour

Ingredients:  

  • 19-inch graham cracker crust
  • 18-ounce package cream cheese, softened
  • 14-ounce can sweetened condensed milk
  • ¼ cup powdered sugar
  • 3.4-ounce box instant lemon pudding mix
  • 2 teaspoons fresh lemon zest
  • ¼ cup lemon juice, freshly squeezed
  • 21-ounce can LUCKY LEAF Premium Blueberry Pie Filling

Directions:

  1. Combine cream cheese, condensed milk and powdered sugar in a large bowl. Using an electric mixer, mix at medium speed for 1-2 minutes, until smooth. Add pudding mix, lemon zest and lemon juice; mix until well blended.
  2. Spoon about half of the LUCKY LEAF Premium Blueberry Pie Filling evenly into bottom of graham cracker crust. Spoon lemon-filling mixture on top and spread evenly. Cover and chill for at least 1 hour.
  3. Spoon remaining Lucky Leaf Premium Blueberry Pie Filling on top just before serving. Garnish with fresh lemon zest if desired.
